First and foremost, let’s be clear: bacon goes with everything. There are the obvious pairings, of course: the classic bacon and egg breakfast, the timeless beauty of a bacon and tomato sandwich, the perfection that is a bacon cheeseburger. But as bacon’s popularity has exploded in the past few years, more daring chefs have proven that we need not stop at these tried-and-trusted combination, or even only think of bacon as a savoury food. With bacon being combined into milkshakes, shaped into sushi, and even drizzled with chocolate. With no end in sight to the exciting bacon combinations, sometimes a bacon lover can spend all of their time trying new and novel bacon dishes.
Every once in a while, however, you have to return to the old standbys, those traditional bacon dishes that made you fall in love with its smoky saltiness to begin with. In honour of one of my favourite combinations, for this edition of Bacon Love Friday we’re going to look at the classic combo of bacon and potatoes. Anyone who has had a baked potato loaded with butter, sour cream, bacon and chives knows this is one of the best things in the entire world.
Roasted Potatoes with Bacon
The first thing I learned to do to a potato (other than stuff it in an exhaust pipe) was to roast it. This particular variation on that technique takes the humble roasted potato from classic side dish to centrepiece status. The fresh parsley give the dish just a hint of freshness, and the Parmesan cheese accents the saltiness of the bacon beautifully.
Bacon-Wrapped Potato Bites
Any food on this planet can be made better by wrapping it in bacon, and delicious little potato nubbins are certainly no exception. Set these puppies out at your next party with some spicy sour cream dipping sauce and you will be declaring a hosting genius.
Potato Bacon Torte
This dish is perfect if you’re looking for an informal bacon and potato dish to serve as a main dish, perhaps for a casual luncheon. Gruyere cheese and heavy cream give this dish a wonderful creaminess, and the thyme adds a lemony, herbal aroma that will make anyone’s belly rumble.
Creamy Potato Bacon Soup
Okay, so we admit that all the bacon, bacon drippings, and heavy cream does not exactly make this soup a diet-friendly option. That said, you’re reading a site called the Republic of Bacon, so I don’t assume you’re here for only the lightest and most flavourless food writing. The fact of the matter is this soup is delicious, hearty, creamy and wonderful, perfect for a Winter lunch.

Even when it comes to foods as solid and filling as potatoes and bacon, sometimes you need a daintier option to impress more refined guests (or perhaps a delicate lady friend?). For just such occasions, I highly recommend that you try these fluffy little pillows of deliciousness.
